WHAT happens?

Milk consists of water, fat, and proteins. When you add food coloring to the milk, the color stays on the surface because it’s water-based and doesn’t easily mix with the milk’s fat. When you add a drop of dish soap, something surprising happens: The soap contains molecules that bind to fat with one end and to water with the other. These molecules start breaking down the fat molecules in the milk, creating movement in the liquid. This movement causes the colors to spread and form swirling patterns. The colors follow the currents that arise as the soap disperses and breaks down the fat – this is what makes your milk art begin to “live.”
